In honor of the first day of Autumn, we had soup for dinner.Â This souper (couldn’t resist) easy recipe is our cool weather pick for those nights when time and imagination are at a premium.Â IÂ developed this recipe several years ago, and it is one of the few things that I makeÂ that ALL of my kids will eat.Â I used to have to double it, but a regular size batch is good for 2 to 4 people.
Serves 2 to 4, ready in a flash
5 cups water
5 chicken bouillon cubes
1 8 ounce can tomato sauce
1 16 ounce package frozen cheese tortellini
Parmesan cheese, to taste
Bring water, chicken bouillon, and tomato sauce to boil in a large saucepan.Â Add tortellini, and bring backÂ to a boil.Â Boil for 5 to 7 minutes or until cooked to desiredÂ level of tenderness.Â Serve with a little parmesan cheese sprinkled on top.Â Must be made and served immediately or all ofÂ the broth gets soaked upÂ by the pasta.
