What’s Cookin’ – Spaghetti Carbonara

Well, after posting the recipe for the Chocolate Chip Cookie Sweet Rolls, here, on Sunday, I realized that the recipe made 48 rolls, and, since there are only 4 of us in the house, I had to get rid of them.  So I sent 24 of them to the office with my husband, and some to school with my kids to my favorite taste testers.  Here is the feedback from Mrs. B – “Clearly, ‘sometimes you feel like a nut; sometimes you don’t’ does not apply to the chocolate chip rolls.  The nuts did it for me.  That crunchy little topping was fabulous.  Why be concerned about a few nutty calories when your sweet breakfast is already over the top?  Overall Rating:  Delicious.”  Thanks, Mrs. B, you make me blush.

As is often the case these days, there were only 2 of us for dinner on Sunday.  I knew that I had a few pieces of bacon and Prosciutto Ham (okay, so I didn’t follow the recipe EXACTLY) in the frig so I decided to make a 2-serving recipe for Spaghetti Carbonara that I have had sitting in my pile of “recipes to try someday.”  This recipe was posted on Half Assed Kitchen and is an adaptation from Cooking Light.  Does that sound like an oxymoron to you, too?  I knew I had to try it.

This was simple, not too rich, and was quite enjoyable with a nice glass of red wine.  And, yes, even though the kids are gone, we still sit at the table, say grace, and enjoy some nice conversation together.
