I had a sick kid this week. So I made a quick and easy chicken noodle soup to soothe her sore throat. This isn’t truly from scratch, but it’s also not canned soup. This makes a quick and easy meal for a busy weeknight or for a sick kid.
The cast of characters – notice the lack of anything green here. That is because my kids do not like “green stuff” in their food. If you have more adventurous eaters, feel free to add a stalk of celery to the cast.
Easy Chicken Noodle Soup Makes 4 servings, easy peasy and ready in about 20 minutes 4 cups chicken broth Heat broth with carrot, celery, and black pepper over medium high heat until comes to a slow boil. Add noodles and chicken. Cook at a slow boil for 10 minutes or until noodles are tender. Serve in a bowl with crackers on the side.
1 medium carrot, roughly chopped
1 medium stalk of celery, roughly chopped (totally optional)
1/2 cup linguini noodles, uncooked, broken into pieces (may also use spaghetti, thin spaghetti, or angel hair, whatever you have in the pantry)
1 cup shredded chicken (I used canned chicken)
Pepper, to taste
