One week we had snow, the next week we had an 80+ degree day. We took advantage of the warm day and grilled for the first time this year! We do grill in the Winter, but this Winter it has been so cold and snowy and icy, that we haven’t grilled since last Fall.
One of our favorite quick grilling meals is Pork Tenderloin. It’s quick and easy.
Grilled Pork Tenderloin ingredients.
Rub all over with olive oil, salt and pepper, and thyme. Cover and refrigerate for a few hours. Remove from refrigerator and allow to come to room temperature for about 30 minutes prior to grilling.
Grill for about 8 to 10 minutes per side on a grill that has been preheated to medium high heat. Remove from grill and cover with aluminum foil.
Pork is supposed to be cooked to an internal temperature of 160° to 165° F; however, if you wait until the meat is this warm on the grill, it will be overcooked and dry because it continues to cook off the grill. That is why you should grill only to 150° to 155° F.
After removing the meat from the grill, cover with aluminum foil. The meat will finish cooking and all of the juices will be reabsorbed into the meat. If you cut it too soon, all of the juices run out, and you have dried out meat to eat.
Slice and serve immediately.
So simple. So good. And so yummy.
Grilled Pork Tenderloin Serves 4 to 6 One package containing 2 tenderloin pieces Remove tenderloins from package, rinse, and pat dry. Rub all over with olive oil. Salt and pepper on all sides. Rub thyme on all sides. Refrigerate for a few hours. About 30 minutes prior to grilling, remove from refrigerator and allow the meat to come to room temperature. Heat grill to medium high heat. Grill the tenderloins for 8 to 10 minutes on both sides. You want to bring to an internal temperature of 150° to 155° F. Remove from grill and cover with aluminum foil for 5 to 10 minutes. This will allow the meat to finish cooking and for all of the juices to be reabsorbed into the meat. Slice and serve immediately.
4 TB or so Olive Oil
2 TB or so Thyme
Salt and Pepper, to taste
