What’s Cookin’ – Focaccia Bread

If you love Focaccia and think that you can only get it at the bakery or specialty sandwich shop, think again!  Focaccia is easy to make.

All you need to do is to make your favorite pizza dough and bake it into 9 or 10 inch rounds using your cake pans.  And if you make your own, you can use whatever toppings you prefer.

Focaccia ingredients.

I use the Basic Pizza Dough recipe from my Joy of Cooking cookbook.

Put yeast into warm water.  After 5 minutes, it will be nice and bubbly.

Run the tap until the water gets hot and fill the measuring cup to the 1 1/3 cup mark.  Add 2 1/4 tsp (or 1 package) yeast to the warm water.  Let sit for 5 minutes.

Dump this into the bowl of your mixer and add 3 1/2 cups of flour, 2 TB olive oil, 1 TB salt, and 1 TB sugar.  Mix on low speed until all ingredients are blended together.  You may have to scrape down the sides of the bowl a few times.  This will take 1 or 2 minutes.

Using your dough hook, knead on medium for 10 minutes.  The dough will be smooth and elastic.

Add 1/4 cup olive oil to each of two 9 or 10 inch round cake pans.

Divide dough into 2 equal portions, roll out, and press into the cake pans.  Cover and let rise in a warm spot for 1 1/2 hours.

If the dough shrinks away from the sides a little, don’t worry, it will fill out the pans as it rises.

Preheat oven to 400°F, and prepare the dough for baking.  This one is sprinkled with a little sea salt.

After the dough has risen, dimple it using your fingertips, and pour an additional 1/4 cup of olive oil over the top.  You may tilt the pans to coat the oil over the surface.  Season with your toppings of choice or leave them plain.

And this one is sprinkled with a little dried rosemary and Parmigiana Reggiano cheese.  Bake until golden brown, about 25 minutes.

Remove Focaccia from the oven and pans and allow to cool on racks.

Slice into bread sticks or quarter and slice for sandwiches.
