What’s Cookin’ – Katy’s Favorite Marinated & Grilled Chicken Breast

My daughter, Katy, loves this chicken breast recipe so I decided to name it after her.  We serve chicken grilled this way over pasta, over salad, or as is with side dishes.

True story – Our daughter, Michelle, came to live with us when she was 13.  She had never eaten meat cooked with skin and bones, and would not eat a roasted chicken or whole chicken breast, for instance.  She just wasn’t used to the taste after a diet of highly processed meats such as bologna and hot dogs.  She gradually adapted to food that tasted like, well, real food.

And that is the problem with boneless, skinless chicken breasts.  They are rather bland and can be very dry if not cooked properly.  But they can also be a really good and quick meal, too.  So we do grill them or use them in Chicken Parmigiana, but boneless, skinless chicken breasts always need something added to them for flavor.

Marinade ingredients – You can either use freshly squeezed lemon juice or the stuff in the bottle.

One lemon will make about 1/4 cup of juice.  Lemons are often very expensive where we live so I sometimes use ReaLemon lemon juice, and it works fine, too.

I always pound my chicken breasts between two pieces of waxed paper so that they will cook more evenly.

It’s a good way to release aggression, too.  Not that I need to release any aggression.

I use my indoor grill pan during the winter, but will start up the outdoor grill in good weather.  In either case, it should only take about 8 to 10 minutes per side for them to be completely cooked.  Remove from grill and cover for 5 minutes or so so that the meat can retain all the moisture.

You can slice and serve over pasta or a salad or serve whole with side dishes.

If you slice the breasts and a lot of fluid comes out, you have not let them sit long enough.  These breasts were very moist.

This past weekend, we had our grilled chicken served over a salad.

Yummy.
